Ingredients
- 1 bag frozen tater tots
- 1 lb breakfast sausage
- 1 sweet onion, diced
- 1–2 jalapeños, sliced (optional for heat)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1–2 cups Chili Cheese Fritos
- 6 eggs
- ½ cup Sweet Baby Ray’s Honey BBQ Sauce
- Blackstone Essential Blend seasoning (or salt, pepper, garlic)
- Oil for cooking
Instructions
- Preheat your Blackstone griddle to high heat. Add oil and cook frozen tater tots until golden and crispy. Season with Blackstone Essential Blend. Smash and chop into hash pieces as they cook.
- In another section, cook sausage until browned. Add onion and cook until softened.
- Combine sausage, onion, tots, and Fritos. Shape into a round patty.
- Lower heat. Top with shredded cheese and drizzle barbecue sauce.
- Crack eggs on top, making small divots so they sit neatly. Cover with a dome and steam until egg whites are set and yolks remain runny.
- Add sliced jalapeños, crushed Frito dust, and a final drizzle of barbecue sauce.
