Smoked BBQ Beef Melt

Tender, juicy smoked chuck roast piled high with caramelized onions, melty cheese, and tangy BBQ sauce — all grilled to perfection on the @BlackstoneProducts griddle. This Smoked BBQ Beef Melt is the ultimate comfort food sandwich. Perfect for backyard cookouts, game day, or whenever you want something indulgent and loaded with flavor.


Ingredients

For the Smoked Beef

  • 2 chuck roasts (~3–4 lbs total)
  • Olive oil (for coating)
  • BBQ rub (I used Meat Church Holy Voodoo)
  • 2–3 large sweet onions, sliced
  • 4–5 tbsp beef tallow
  • 2–3 cups beef broth

For the Sandwiches

  • Texas toast bread
  • Butter (for grilling bread)
  • Monterey Jack cheese slices
  • Colby Jack cheese slices
  • BBQ sauce (I used Sweet Baby Ray’s)

Instructions

  1. Prep & Smoke the Beef
    • Rub chuck roasts with olive oil and generously coat with BBQ rub.
    • Insert a meat probe thermometer and smoke at 250°F until internal temperature reaches about 165°F.
  2. Braise with Onions & Tallow
    • In a pan, layer sliced onions, a few spoonfuls of beef tallow, and place the smoked chuck roast on top.
    • Add more tallow over the beef, pour in beef broth to cover the bottom of the pan, cover with foil, and return to the smoker for 2–3 hours until tender.
  3. Rest & Shred
    • Let the beef rest for at least 1 hour.
    • Shred the beef in its own au jus with the onions.
  4. Build the Sandwich
    • Heat the Blackstone griddle over medium heat.
    • Butter Texas toast and toast one side.
    • Add Monterey Jack slices to one slice of bread, top with shredded smoked beef & onions, drizzle with BBQ sauce, add Colby Jack slices, and top with the second slice of bread.
  5. Grill & Melt
    • Butter the top slice, flip, and dome to melt the cheese.
    • Grill until golden and crispy.
  6. Serve & Enjoy
    • Slice in half and enjoy the melty, smoky, BBQ beef perfection.

  • Swap cheeses for provolone or cheddar for a different flavor profile.
