Homemade McRib

Ingredients

For the McRib Patties

  • 1 lb ground pork
  • 1 lb bacon, finely chopped
  • BBQ seasoning of choice

For the Sandwich

  • Sweet Vidalia onion, thinly sliced
  • Dill pickle slices
  • Pepperidge Farm hoagie buns (or similar)
  • Sweet Baby Ray’s BBQ sauce

Instructions

1. Mix the Meat

In a large mixing bowl, combine ground pork, finely chopped bacon, and BBQ seasoning. Mix until well incorporated.

2. Shape the Patties

Use a mold—or shape by hand—to create the iconic McRib shape, adding rib indentations for authenticity.

3. Season & Cook

  1. Preheat the Blackstone Griddle to medium-high heat.
  2. Season one side of each patty and place it on the griddle.
  3. Flip, season the other side, and cook until the internal temperature reaches 160–165°F.

4. Prep Toppings & Sauce

  1. Thinly slice the onions.
  2. Toast the hoagie buns on the griddle until golden.
  3. Pour BBQ sauce into a small container for dipping.

5. Sauce & Assemble

  1. Dip each cooked patty fully in BBQ sauce.
  2. Place the sauced patty on the bottom bun.
  3. Top with sliced onions and dill pickles.
  4. Finish with the top bun.
