Blueberry and Brie Dessert Grilled Cheese

Ingredients

  • ½ cup fresh blueberries
  • 2 tbsp sugar
  • Juice from ½ lemon
  • 2 slices brioche bread
  • 8 oz wheel of brie (sliced, rind removed)
  • About 2 tbsp butter
  • Powdered sugar for garnish

Instructions

  1. Preheat the Blackstone Griddle to medium-low heat. Place the fresh blueberries on the griddle and warm them up. Sprinkle the sugar over the blueberries and toss gently until they become juicy. Squeeze the lemon juice over the blueberries, remove from the griddle, and set aside.
  2. Add 1 tbsp of butter to the griddle and let it melt. Place the brioche bread slices on the melted butter and toast until golden brown on one side.
  3. Slice the brie into ⅛- to ¼ -inch thick pieces and remove the rind.
  4. Once one side of the brioche is toasted, flip the slices and add more butter to the griddle. Place a slice of brie on one of the toasted sides. Spoon the warm, juicy blueberries onto the brie, then add another slice of brie on top of the blueberries.
  5. Place the second slice of brioche, toasted side down, on top to form a sandwich. Cover the sandwich with a basting dome and let it toast until the cheese begins to melt. Gently flip the sandwich, cover again with the dome, and cook until the second side is golden brown, and the cheese is fully melted.
  6. Remove the sandwich from the griddle, slice it in half, and sprinkle with powdered sugar.
