Egg fried rice is one of my favorite quick meals to make on the Blackstone griddle. It’s flavorful, satisfying, and perfect as a side dish or main course. The secret is day-old rice — cooked in chicken stock and left uncovered in the fridge overnight — to give you that perfect fried rice texture. Once you add in shallots, garlic, butter, soy sauce, and toasted sesame oil, you’ve got restaurant-quality fried rice right from your griddle.
Ingredients
- 3–4 cups day-old rice (cooked in chicken stock, refrigerated overnight)
- 2–3 shallots, diced
- 1 head garlic, minced
- 6–8 green onions, sliced
- 7–8 eggs
- 1 stick butter
- 2–3 tbsp oil (vegetable or canola)
- Blackstone Essentials seasoning (or salt and pepper)
- 1 tsp MSG (optional, for extra umami)
- 2–3 tbsp soy sauce (adjust to taste)
- 1–2 tsp toasted sesame oil
Instructions
- Prepare the rice:
Cook your rice in chicken stock instead of water. Once done, spread it evenly in a shallow pan and refrigerate uncovered overnight to dry out. - Dice and prep ingredients:
Finely dice shallots and garlic. Slice green onions and set aside — you’ll use them at the end. - Heat the griddle:
Preheat your Blackstone to high, then lower it to medium-low. Add oil and spread it evenly across the griddle top. - Sauté the aromatics:
Add shallots and garlic to the griddle and cook until fragrant. Add the stick of butter and melt it down. - Add the rice:
Spread your day-old rice evenly across the surface. Season with Blackstone Essentials (or salt, pepper, and MSG). Let it fry lightly before stirring. - Add the eggs:
Create a well in the center of the rice and crack in your eggs (about 3 per cup of rice). Scramble them gently until nearly cooked, then mix everything together. - Add the sauces:
Drizzle soy sauce over the rice for color and flavor. Add a small amount of toasted sesame oil — a little goes a long way! - Finish with green onions:
Stir in the green onions at the very end just to combine without overcooking them. - Serve hot and enjoy:
Serve straight from the griddle. It’s delicious as is or topped with your favorite sauce.
