Cheesy Mexican Lasagna

Looking for a quick, hearty dinner that’s packed with flavor? This cheesy Mexican lasagna is made right on the Blackstone E-Series griddle and baked in a cast iron pan until bubbly and golden. Layers of tortillas, beans, beef, cheese, and toppings come together in the ultimate comfort food dish.


Ingredients

  • 2 lbs ground beef
  • 1 packet taco seasoning (or homemade)
  • 6–8 burrito-sized flour tortillas
  • 1 can refried beans
  • 2–3 cups shredded Mexican blend cheese
  • 1 cup corn kernels
  • 1 can diced tomatoes (drained)
  • ½ cup Taco Bell taco sauce (or your favorite brand)
  • ½ cup white queso (optional, for extra creaminess)

Instructions

  1. Cook the beef
    • On the Blackstone E-Series griddle, cook the ground beef until browned.
    • Mix in the taco seasoning and combine well.
  2. Prepare the cast iron pan
    • Place a burrito-sized tortilla on the bottom.
    • Spread a thin layer of refried beans evenly across.
  3. Layer it up
    • Add shredded cheese, seasoned ground beef, taco sauce, queso, corn, and diced tomatoes.
    • Repeat with another tortilla and continue layering until the pan is nearly full.
  4. Top it off
    • Finish with a tortilla, a spread of taco sauce, and a generous layer of shredded cheese.
  5. Bake
    • Place the cast iron pan in the Blackstone E-Series Pizza Oven (or a standard oven).
    • Bake at 400°F (205°C) for 20 minutes, or until the cheese is melted and bubbly.
  6. Serve
    • Let it cool for a few minutes, slice into portions, and serve hot.
    • Perfect with sour cream, guacamole, or salsa on the side!
