Ingredients
- 2 lbs ground beef
- 1 packet taco seasoning (or homemade)
- 6–8 burrito-sized flour tortillas
- 1 can refried beans
- 2–3 cups shredded Mexican blend cheese
- 1 cup corn kernels
- 1 can diced tomatoes (drained)
- ½ cup Taco Bell taco sauce (or your favorite brand)
- ½ cup white queso (optional, for extra creaminess)
Instructions
- Cook the beef
- On the Blackstone E-Series griddle, cook the ground beef until browned.
- Mix in the taco seasoning and combine well.
- Prepare the cast iron pan
- Place a burrito-sized tortilla on the bottom.
- Spread a thin layer of refried beans evenly across.
- Layer it up
- Add shredded cheese, seasoned ground beef, taco sauce, queso, corn, and diced tomatoes.
- Repeat with another tortilla and continue layering until the pan is nearly full.
- Top it off
- Finish with a tortilla, a spread of taco sauce, and a generous layer of shredded cheese.
- Bake
- Place the cast iron pan in the Blackstone E-Series Pizza Oven (or a standard oven).
- Bake at 400°F (205°C) for 20 minutes, or until the cheese is melted and bubbly.
