Mini Party Tacos

Ingredients

  • 1 lb ground beef
  • 1 can refried beans
  • 1 sweet onion, finely diced
  • 2–3 tbsp Blackstone Street Taco Seasoning (or similar)
  • 1 package street taco-size white corn tortillas
  • Shredded quesadilla cheese
  • Red taco sauce (to taste)
  • Oil for frying
  • Dips: queso, guacamole, or salsa

Instructions

  1. Dice onion and set aside.
  2. Cook ground beef on the Blackstone griddle until browned.
  3. Add Street Taco Seasoning and refried beans, mixing until incorporated.
  4. Stir in diced onion and cook until softened. Remove mixture to a bowl and mix in taco sauce.
  5. Preheat the griddle with oil.
  6. Lay out tortillas and sprinkle a small pinch of shredded cheese on one side of each.
  7. Add a spoonful of the meat mixture on top of the cheese.
  8. Fold tortillas in half and place in the hot oil. Cook on low to medium-low heat until golden and crispy, flipping once.
  9. Drain on a rack. Serve warm with queso, guacamole, or salsa for dipping.
