Ingredients
- 1 lb ground beef
- 1 can refried beans
- 1 sweet onion, finely diced
- 2–3 tbsp Blackstone Street Taco Seasoning (or similar)
- 1 package street taco-size white corn tortillas
- Shredded quesadilla cheese
- Red taco sauce (to taste)
- Oil for frying
- Dips: queso, guacamole, or salsa
Instructions
- Dice onion and set aside.
- Cook ground beef on the Blackstone griddle until browned.
- Add Street Taco Seasoning and refried beans, mixing until incorporated.
- Stir in diced onion and cook until softened. Remove mixture to a bowl and mix in taco sauce.
- Preheat the griddle with oil.
- Lay out tortillas and sprinkle a small pinch of shredded cheese on one side of each.
- Add a spoonful of the meat mixture on top of the cheese.
- Fold tortillas in half and place in the hot oil. Cook on low to medium-low heat until golden and crispy, flipping once.
- Drain on a rack. Serve warm with queso, guacamole, or salsa for dipping.
